Freshness, its backbone
Monovarietal wine made of Xarel·lo, an excellent ambassador of the character of the Penedès. The vineyards are located between the central and northern part of the wine-growing region, specifically in the Foix river basin.
The grapes are destemmed and cooled below 8oC and once the must has been separated, it is slowly fermented in stainless steel tanks at a controlled temperature of 17oC to preserve the varietal aromas. During the following weeks, bâtonnage is carried out to give more complexity to the wine. This wine seeks a balance between freshness and a certain volume on the palate.
