100% White Garnacha. As it is a variety with oxidative tendencies, extreme care is taken throughout the production process. An exhaustive control of ripening is undertaken to harvest the grape at its most optimal moment to achieve the perfect balance between freshness, fullness on the plate and aromatic power.
The grapes are harvested at night and after an initial selection on the vines, the grapes are transferred to the winery where they are destemmed and cooled to a temperature below 8ºC. Once the must is separated, it ferments in stainless steel tanks at a controlled temperature of 17oC to preserve the varietal aromas.
