Organic wine made with Garnacha Tinta and Cariñena from vines found in the north of Vilafranca del Penedès, in the central basin of the river Foix.
This is a coupage of complementary varieties: the Garnacha provides aromatic power and the Cariñena gives structure and volume on the palate.
Manual harvesting with selection of the grapes according to the ideal ripening of each cluster. The grapes are destemmed and macerated for 48 hours at a low temperature to preserve the aromatic components of the grapes as much as possible. Alcoholic fermentation with its skins takes place, after a partial bleeding of the wine for more than two weeks at a controlled temperature and below than 25ºC. It is transferred in a controlled way and malolactic fermentation occurs to soften its acidity.
