The long ageing process in cork and manual disgorging give the Cava a great aromatic complexity. You are invaded by an infinite number of aromas from the ageing process:
confectionery, nuts, honey and hints of ripe fruit (peach in syrup).
Its structure on the palate and its very fine bubble are surprising. It is creamy and unctuous.
Manual harvesting in crates; controlled alcoholic fermentation to preserve the maximum expression of the grape. Malolactic fermentation is avoided to maintain the varietal essence of the grape. Without added sugars and aged for more than 60 months in rhyme, aged with cork and manual disgorging.
Due to its strength, it is an ideal Cava that matches well with dishes with intense flavours such as meat, seafood and also pairs well with puff pastry or dried fruit desserts.
